TGI FRIDAY'S JACK DANIELS GRILL GLAZE

1 head garlic
1 T. olive oil
2/3 C. water
1 C. pineapple juice
1/4 C. teriyaki sauce
1 T. soy sauce
1 1/3 C. dark brown sugar
3 T. lemon juice
3 T. minced white onion
1 T. Jack Daniels
1 T. crushed pineapple
1/4 tsp. cayenne pepper

Cut 1/2 inch off top of garlic. Cut off the roots so that the bulb sits flat. Remove paper skin but keep together garlic head intact. Put into a small baking dish, drizzle with olive oil, cover with foil and bake at 325ºF for 1 hour. Cool

Combine water, pineapple juice, teriyaki sauce, soy sauce and brown sugar in medium saucepan over medium heat. Stir occasionally until mix boils. Reduce heat to simmering.

Squeeze sides of garlic to get out the pasty roasted garlic, then whisk into the simmering mix with wire whisk.

Add remaining stuff and stir well. Let simmer for about 50 minutes until sauce is reduced by half and is thick and syrupy. Don't let boil the sauce boil over. Yields 1 cup.
