LONG JOHN SILVER'S FISH
3 C. soybean oil
2 lb. fresh cod fillets
1 2/3 C. self-rising flour*
1 C. water
1 egg
2 tsp. granulated sugar
2 tsp. salt
Preheat oil to 400ºF. Cut fish into wedges. With a mixer blend flour, water, egg, sugar and salt. Dip each fillet into the batter coating and drop into and fry for about 5 minutes or until golden brown.
