LONG JOHN SILVER'S BATTER
3 C. soybean oil
2 lb. fresh cod filets
1 C. self-rising flour
1/3 C. dry mustard
1 C. water
1 egg
2 tsp. granulated sugar
2 tsp. salt
Sift together salt, mustard and flour in a bowl.
Heat oil to 400ºF.
Cut fish into approximately 7 x 2-inch wedges.
With a mixer, blend the flour mixture, water, egg and sugar. Dip each wedge into the batter, coating generously and quickly drop into oil.
Fry each filet until dark golden brown, about 5 minutes.
Remove and drain.
