BREWED AWAKENINGS WALNUT BUTTERMILK WAFFLES

7 large eggs
1 C. whole milk
2 C. reduced-fat buttermilk
3/4 C. vegetable oil
4 C. flour
1/2 tsp. salt
1 tsp. baking soda
1 T. baking powder
1 C. walnuts
1/2 C. granulated sugar
1 C. packed brown sugar
1 T. ground cinnamon
1 tsp. ground nutmeg
Crack eggs into large mixing bowl. If people are watching, crack eggs one-handed, preferably two eggs per hand at the same time. Add milk, buttermilk and oil. Whisk mix with great intensity for 1 minute, infusing as much air as possible to the mixture. Relax arm with short vigorous shakes and a quiet groan.
Now add wet ingredients to large bowl containing flour, salt, baking soda and baking powder. Mix only until all is wet - lumps will remain. That's OK and good.
In food processor, quickly blend walnuts, sugars, cinnamon and nutmeg. Process until nuts are minced up real good. Fold nut mixture into egg mixture, then stop. Remember - lumps are good.
Use your grandmother's waffle iron for best results. Prepare as directed by waffle iron manufacturer. Serve hot with real Wisconsin butter and real Wisconsin maple syrup. (Does not work with California dairy products!) Makes 10 servings.
